Overpriced, but delicious when truly fresh.
And the kizami wasabi is a nice touch – my favorite way to have wasabi (even more than grated fresh).

It’s amazing but overused with low quality.
The majority of places are buying the cheap, lackluster uni and throwing it on everything to look special. But when you get a place that’s using the top shelf stuff and knows how to use it – it makes all the difference

You know that scene in Ratatouille where the bite takes him back to his childhood? Same thing, the second I bit down I was transported back to Galvaston as a little kid, went out too far, fighting for my life against the waves and got a mouth full of the water.

Amazing. Nothing like it. If you’re visiting a good sushi-ya they usually feature different types of uni – definitely try them side by side.
Bafun Uni from Hokkaido, California Uni from Santa Barbara, Green Uni from Boston Harbor, etc. They will change your mind completely about what that little ball of spikes can bring in terms of flavor.

The first time I had uni, it was extremely good. I’ve subsequently ordered it and even at high-end places, it’s pretty hit or miss, which can be such a disappointment. As a result, I rarely order it anymore unless I have evidence to believe that a place is serving the good stuff. Mid-tier tuna is still going to taste nice. Mid-tier uni is unpleasant.
