    Looks good and tasty maybe a bit overcooked but still delicious. Ok now either sharpen that knife or throw it away, you’re basically pushing through it.

    Buy a brisket knife. I just used my chef’s knife for the first few but a brisket knife makes it easier imho.

    Not being negative. Go on Amazon and buy a brisket carving knife. You can get a good intro one for like $20-30. Also good moisture inside.

    Get yourself a Victorinox Fibrox carving knife not super expensive but a really decent knife I’ve still got one from when I was an apprentice butcher like 12 years ago although I use a Damascus steel blade now I got as a gift purely cos it looks cooler lol

    The Brisket looks the goods though! Nice job with it.

    That’s the driest brisket I’ve ever seen. I’d also like to say, that’s not bark, that’s char. Too high of a cook temp, possibly too long.

    i’ve had one of these for probably 20 years… puts a decently sharp edge without any effort or skill. don’t force it, just let it glide through a few dozen times to reset the edge, then use a steel rod to maintain the edge once you have one…

    Use a serrated knife (preferably sharper than your cake knife) when cutting brisket.
