These are all maybe a month and a half old. We're in the UK, might have gotten excited and started a bit too early, because we still have another month until our last predicted frost date.
I can rearrange things and move at least a few to another room, but should I just prune the tops off the rest of them so I can keep them here for a couple more weeks, hopefully? Ease down on the fertiliser?

Same thing happened to me. I ended up buying another shelving unit and more lights.
If your weather is anything like in the Netherlands right now (bloody gorgeous spring weather), I would harden them off and just pop them outside during the day. Bring them back in at night and then they don’t need the lights anymore either, so you can put them wherever.
Are the shelves adjustable?
