HIGHWOOD, IL — Pelago Café, a new Italian spot that showcases a family’s rich tradition, is set to open up in Highwood this month.

Founded by cousin duo and Highwood residents Mada Ugolini Hitchmough and Ruthie Amidei, the pair aim to celebrate their shared heritage by sharing it with the local community. Pelago’s story began in the Emilia-Romagna region of Italy, where Hitchmough’s father worked as a baker before immigrating to the U.S.

Hitchmough’s home was bursting with appetizing aromas from fresh focaccia and handmade pastas as she grew up. Amidei was equally immersed in their family’s culinary roots, which inspired her to study culinary arts in Tuscany.

“When our families immigrated from Italy, they planted their roots in Highwood. We both live here today and love this community deeply,” Hitchmough and Amidei said. “Highwood has such a rich appreciation for culture and cuisine. It’s built on the shoulders of our ancestors and we wanted to contribute to that tapestry by bringing the flavors of our region, Emilia‑Romagna, to the town that shaped us.”

Pelago Café will serve a curated selection of classic Italian comfort foods such as Italian subs, Lasagna, and roasted seasonal veggie paninis. The cafe will also offer its own signature flatbreads, called flatinis.

Amidei will also bring her beloved biscotti brand, Ruthie’s Biscotti, to the cafe. Hitchmough’s handmade tortellacci, which are already served at several local establishments, will be at home on Pelago’s menu.

An exact date for opening is not yet set, but Pelago is expected to be open in late April. More details are expected to be announced soon on the cafe’s Instagram.

“We can’t wait to share Pelago Café with everyone, the food, the stories, the feeling of home,” the owners said. “This café is our love letter to our heritage and to Highwood.”
