  • 2 tablespoons finely chopped crystallized ginger
  • 2 ripe papayas, peeled, seeded, and diced
  • 1 cup blueberries
  • 1 tablespoon slivered fresh mint leaves, plus mint sprigs for garnish

Preparation

  1. Mix together the lime juice, honey and ginger in a large bowl. Add the fruit and slivered mint leaves, and toss together. Serve, garnishing each bowl with a sprig of fresh mint.
