I like canned chicken. it's convenient, it's tender, it's nutritious. it's actually pretty cheap too. but I wanted to make my own. so I sous vide at 140 for 2 hrs and packed it with some chicken broth.

    I’m not following the “why”. This isn’t shelf stable which is kind of like point of canning.

    I dig it. Gets you a clean protein base you can quickly customize with seasoning/flavor according to your final dish. Thx for sharing!
