






my freezer cubes knockoffs from aliexpress came in so i decided to try it out with some leftovers first! i actually did all this on monday but im just now getting around to excavating my cubes lmao
experimenting first with one portion i had leftover of my mom's homemade phở gà. i just froze the noodles raw since ill heat them all up in one pot anyways. my mom gave me so many herbs so i tried freezing some for future bowls – i know it'll come out mushy but it's all soup anyways, baby!
with the extra chicken she gave me and the rest of the herbs, i made a very phở flavored chicken salad. i used my homemade kewpie mayo (non emulsion based) for this so it'd freeze up well. these turned into two very unremarkable looking frozen chicken salad sandwiches for me to chuck into my lunch bag for work 🙂
the final cubes are leftovers from a giant pot of curry i made! instead of letting the pot sit in the fridge all week, i decided to try freezing them. i don't have a straight forward recipe for this other than the fact that i was trying to get rid of all the veggies in my fridge, so i chopped up purple cabbage, napa cabbage, onion, king oyster mushrooms, bok choy, and potatoes and tossed it in a pot with chicken thighs + bean sprouts. i added an entire box of golden curry cubes and seasoned with additional mushroom powder and chicken bouillon powder too.
i ended up cutting so many veggies that i had to bag half of them in two gallon baggies to freeze. future me will at least be super excited to have precut veggies to use in another curry or lentil soup!

We recently added a rule (#6) requiring either a recipe or list of ingredients, since it is so often requested. If you wouldn’t mind adding that we’d appreciate it!
I love my souper cubes knock offs as well! I literally just took some pulled pork out of them today and I’m making some refried beans with it for dinner. And I love the idea of pre-cutting curry vegetables! I don’t know why I didn’t think of that myself, because it is so smart!
recipes / ingredients list:
chicken pho:
– bone-in chicken
– one whole onion
– star anise, cloves, cinnamon
– cilantro, green onion, culantro, thai basil, mint
– bean sprouts
– rice noodles
would highly suggest grabbing a container of quoc viet pho soup base for this and following the instructions on there! i don’t know my mom’s exact recipe, but i usually will just toss the chicken, onion, and spices in a pot with water and the soup base. once the chicken is cooked, ill remove it and separate the meat from the bones once it’s cool enough. ill also prep all the herbs (wash, cut as needed) on the side and then it’s just a matter of assembling the bowl! make sure to cook the noodles, which can be done in seconds in the boiling broth.

curry:
– purple cabbage, napa cabbage
– bok choy
– king oyster mushrooms
– potatoes
– onions, garlic
– chicken thighs
– apple
– bean sprouts
– golden curry japanese curry mix
– mushroom or chicken bouillon
basically chop all the veggies and apple to bite sized pieces and toss in a pot! i sauteed garlic and onion first in the pot before adding everything else. add the curry mix so that the veggies and chicken cook in it. cook until the chicken is cooked through. add mushroom and/or chicken bouillon powders to taste, then serve with rice! this can be made with any veggies you have leftover in your fridge. id highly recommend including potatoes and the apple at a minimum though.

– cilantro, green onion, culantro, thai basil, mint
– mayonnaise
– onion powder, garlic powder, salt, mushroom bouillon
chop/cut the chicken and herbs together in a bowl. add mayonnaise and seasonings and combine. eat with crackers or in a sandwich! not a traditional chicken salad in the slightest, but an interesting twist on a classic!
