Saw a fantastic dish, anchovy, garlic, butter, chilli, cream and Parmesan/pecorino. Well, copied it, little less cream, more pasta water and some toasted pepper. Whole tin of anchovies.

Superb.

    Don’t get me wrong, I love anchovies (mmm orecchiette with anchovies, chilli & garlic)…but a WHOLE TIN????

    whole tin of anchovies and you went for it, that’s the move and i bet the pasta water and toasted pepper saved it from being too salty and rich, that creamy garlic situation with the umami punch sounds insane
