Hola! I made some Tinga de pollo with two thighs, and two breasts. I followed Isabel eats recipe on her site and cooked it in the crock pot on low for 8 hours. After removing the bones and adding a bit of salt- I browned up a couple tacos worth. I warmed up a couple Masienda blue corn tortillas and divided the chicken. Topped with pickled red onions and salsa Cacahuate de Pasilla de Mocajete. Squeeze of lime. Not too shabby.
