I make a batch every week, it's so simple and hearty.

Sautée onions, carrots, celery, and leek until soft. Then add a flavor bomb of garlic, rosemary, parsley, and sun-dried tomato and let it all meld together.

Then add whatever vegetables you have on hand. I had used zucchini and potato. Added a can of crushed tomato, a few cups of stock, and a parmesan rind. Let it simmer for about 20 minutes. Then added chopped up Brussel sprouts and a handful of orzo. For the last 5 or 10 minutes, I added a few ladles of beans I had prepared earlier.

So flavorful and filling.
