Spent a few weeks with my dad and decided to end my trip cooking him and his wife a nice meal. This is one of my favorite dishes to cook and it is absolutely delicious!

  2. Ingredients:

    -2lb chuck beef short rib

    -4 carrots

    -1 large yellow onion

    -3 cups beef broth

    -1 cup of wine

    -Gluten free all purpose flour (any flour works)

    -2 tbsp of tomato paste

    -Rosemary sprigs

    -Thyme

    -1 bay leaf

    -Dash of clove

    -Salt and pepper

    -high quality EVOO

    Quick steps:

    -olive oil in, sauté onions and carrots til fragrant, remove.

    -coat beef short rib in flour of your choice and salt+pep, add more olive oil to Dutch oven, brown all sides. Remove.

    -deglaze with wine, stir and scrap bottom of pot for 2 minutes.

    -add broth, tomato paste, salt and pepper to taste.

    -add everything back in, add thyme, rosemary, clove, and bay leaf.

    -place in oven at 350 for 3 hours.

    I’d advocate some celery in the veg and some garlic in the long cook. Mash that cooked garlic with some tongs on the way out of the pot.

    don’t add the tomato paste with liquid in the pot. add it while you’re cooking the veg and let it turn into a deep deep red, almost brown. It adds way more fond and flavor once it gets a deep red color. then deglaze with wine.

    Nah you messed that all up, gotta do tomato paste before the liquid so it can caramelize the sugar

    So I love the spirit…some thoughts. Sear the short ribs first then do the veggies. For the veggies try for more consistent size cuts, but it’s a braise so you have latitude. The paste…what everyone else said…. Will this materially impact the delicious meal, no! So enjoy!

    I’ve got some short ribs in the freezer, never made them before but the stew I make is very similar, can’t wait to make it and this was a sign lol looks amazing great sides that’s how you make asparagus!

    This could just be the video color, but it looks like you didn’t skin the fat and so you’ve got a ton of oil on the plates instead of just the reduced braising liquid or gravy.

    Nice, I’m not far off that method. I sear the meat first and remove. Then I let the veg help with the deglaze.

    Very heartwarming family moment, but please consider that eating and promoting eating meat is ethically very difficult to justify. There are some fantastic vegan substitutes out there to try out!
