Pecan Sticky Buns [tutorial video]

    Pecan Sticky Buns (makes 8 large buns)

    Dough

    3/4 cup whole milk, warm (100–110°F)

    1/4 cup heavy cream, warm

    2 1/4 tsp instant yeast

    1/3 cup granulated sugar

    2 large eggs

    1 egg yolk

    6 TB butter, very soft

    1 tsp fine salt

    4 1/4 cups all purpose flour (plus a few extra TB if needed)

    Cinnamon Filling

    1 stick butter, very soft

    1 cup packed dark brown sugar

    1 TB cinnamon

    1/4 tsp fine salt

    2 tsp vanilla extract

    Sticky Smear (Bottom)

    1 stick butter, very soft

    1 cup packed light brown sugar

    1/3 cup honey

    1/3 cup corn syrup

    1 tsp cinnamon

    1 TB vanilla extract

    1/2 tsp fine salt

    Other

    2 cups chopped pecans

    Method

    Combine warm milk, cream, yeast, and sugar. Let sit about 5 minutes until slightly foamy.

    Add eggs, egg yolk, butter, salt, and flour. Knead about 6 minutes until smooth and slightly tacky. Add a few extra TB flour only if needed.

    Cover and let rise until doubled, about 60–90 minutes.

    Mix the filling ingredients until smooth and spreadable.

    Roll dough into about a 16×16 square.

    Spread filling evenly over the dough.

    Roll tightly into a log and cut into about 2-inch pieces. You should get 8 large rolls.

    Grease a casserole dish and lightly coat with butter.

    Spread the smear evenly across the bottom.

    Sprinkle 2 cups chopped pecans evenly over the smear.

    Place rolls cut side down on top of the pecans.

    Cover with plastic wrap (lightly sprayed so it doesn’t stick) and let proof 1 hour until puffy and touching.

    Bake at 350°F for 25 minutes until golden and cooked through.

    Let sit about 5 minutes, then carefully flip the entire pan out while still warm.

    Also, do not tear open rolls like that. Be normal. Don’t do influencer shit. It’s weird and off-putting.

    Curse my late onset nut allergy. I grew up in the South and was blessed with pecan season, pecan pies and pecans right out the shell. I remember the flavor and I can practically taste these delicious lil guys but if I actually taste them I will have 5 seconds of pure bliss before I am removed from this earth
