As a food writer and recipe developer, I try — and use — a lot of olive oil. I always have at least two bottles open on the counter, one for everyday cooking and a more flavorful option for drizzling and finishing dishes. I reach for them constantly, from savory yogurt bowls in the morning, to lunchtime salads, and Extra Virgin Olive Oil (EVOO)-topped ice cream at night. In my opinion, it’s hard to find a dish that doesn’t benefit from a drop or more of olive oil.

I also love trying new bottles. Even the same brands you love can change from year to year as weather impacts the olive’s harvest and flavors.

Season’s Coratine Extra Virgin Olive Oil is an Italian single-varietal oil made from Coratina olives. These olives are known for their grassy green flavor. This particular oil brings a pop of back-of-the-throat-tingling spice to dishes and bread dunks. It’s quite herby, with notes of unripe fruit.

What’s the Best Way to Use Seasons Coratina Extra Virgin Olive Oil?

Because the oil adds a green, robust flavor, I love to use it to liven up salad dressings, vegetable dishes, and seafood. It’s also assertive enough to season red meat and stronger flavored shellfish dishes.

I find the oil’s flavor summery and fresh, which makes it ideal for grilling. I like it drizzled over vegetable and beef kebabs — it adds a punch of spice that’s more subtle than hot sauce or chile flakes and better complements the fresh produce and rich meat.

The oil is also a surprising addition to sweets like ice cream and baked goods. The pepperiness gets mellowed out by sugar, and you end up with a wonderfully complex combination of sweet, savory and spicy.
