Pink Pearl has launched a new tasting menu worth knowing about. The restaurant, located at JW Marriott Phu Quoc Emerald Bay Resort & Spa, introduced the eight-course experience on March 31, 2026, created by Michelin-starred chef Olivier Elzer.

With 30 Michelin stars earned over his career, Elzer’s latest menu keeps things focused: clear flavours, precise technique, and no unnecessary extras.

The launch took place in the garden rather than a formal dining room, setting a relaxed but considered tone from the start. Guests moved through the evening at a slow pace, with each course building on the previous one.

At its core, the menu sticks to a simple idea: French cooking techniques paired with seasonal ingredients, with light Asian influences. Elzer worked closely with the restaurant’s Chef de Cuisine, Danny, to ensure the execution matches the concept day to day.

The food itself is where it gets interesting. It starts clean and fresh with caviar, bonito tartare, citrus and oyster, before moving into richer territory with scallop, caviar jelly and horseradish cream. A Vietnamese bulot dish in clear consommé brings in a local angle without shifting away from the overall style.

From there, the courses build steadily. Carabinero red prawn with asparagus and caviar leans into depth, while red grouper with mimolette espuma keeps things balanced. The standout is the charcoal-grilled A5 wagyu, paired with braised oyster blade and mushrooms.

Dessert keeps things sharp rather than sweet-heavy. A passion fruit pre-dessert resets the palate, followed by a pavlova with fruit sorbet and cream. It’s a clean finish that fits the tone of the rest of the menu.

The eight-course experience is priced at VND 4,988,000++, with a shorter six-course option available. It firmly sits in the luxury category, but the approach is straightforward: focus on ingredients, keep the structure tight, and let the food speak for itself.

For Phu Quoc, this is another sign that its dining scene is stepping up. Set in a distinctive pink mansion overlooking Khem Beach, Pink Pearl continues to position itself as a serious fine-dining option on the island.
