The evening opened with an intimate reception at Pink Pearl Garden, the culmination of several days of meticulous preparation by Chef Olivier Elzer and his team, who had journeyed to Phu Quoc to shape a singular culinary unveiling. Every element—from the refined table compositions to the nuanced layering of textures and tones—was orchestrated with quiet precision, evoking a sense of effortless sophistication.
As the evening progressed, guests were drawn into a seamless narrative of flavours and moments, culminating in a celebratory toast led by Chef Olivier Elzer—marking not only the debut of a new tasting menu, but a defining expression of Pink Pearl’s evolving culinary vision.
A Culinary Journey Through 8 Courses

Blending classical French techniques with premium seasonal ingredients, the new tasting experience reflects Chef Olivier Elzer’s signature philosophy—precision, balance, and respect for the natural character of each ingredient, subtly enriched with Asian inspirations and nuanced regional flavours.
Developed in close collaboration with Chef de Cuisine Danny, who leads the culinary execution at Pink Pearl, the menu brings Chef Olivier’s vision to life with precision and consistency. From delicate seafood to luxurious wagyu beef and artfully composed desserts, each course unfolds as a refined and expressive culinary narrative.
The journey begins with Oscietra Caviar, paired with bonito tartare, citrus gel, and fresh oyster — an elegant opening that introduces layers of freshness and oceanic depth. This is followed by perfectly seared Scallop, complemented by caviar jelly, barde sauce, and horseradish cream, creating a harmonious interplay between richness and brightness.
Highlighting regional inspiration, the menu features Vietnamese Bulot, delicately presented in a clear seafood consommé with seasonal vegetables, celebrating the essence of coastal flavors while maintaining the refinement of French culinary tradition. The experience continues with the luxurious Carabinero Red Prawn, elevated with Caroline sauce, Asparagus, and Kristal Caviar.
For the seafood main course, Red Grouper is served with mimolette espuma, cuttlefish, and baby spinach — a refined composition balancing marine freshness and creamy textures. The centerpiece of the menu is the indulgent Charcoal-Grilled A5 Wagyu, paired with braised oyster blade, vadouvan sauce, and seasonal mushrooms, delivering depth, richness, and umami complexity.
To refresh the palate, guests are presented with a vibrant Passion Fruit pre-dessert, featuring passion fruit espuma, cachaça granita, and seasonal fruits before concluding the journey with an elegant Pavlova, served with meringue, exotic fruit sorbet and chantilly cream.

The 8-course tasting menu is priced at VND 4,988,000++ per guest, while a 6-course option is also available at VND 4,488,000++ per guest for guests seeking a slightly shorter experience.
