π Recipe:
Orange dough:
β’ 190g (6.7 oz) 00 flour
β’ 180g (6.34 oz) egg yolks
β’ 2 tsp anatto powder
β’ 1 tsp salt
White dough:
β’ 200g (7 oz) 00 flour
β’ 86g(3 oz) water
Black dough:
β’ 200g (7 oz) 00 flour
β’ 180g (6.34 oz) egg yolks
β’ 2 tsp activated charcoal powder
β’ 1 tsp salt
Instructions:
1. Roll out each dough to about 5 mm (0.2 in) thick.
2. Cut into equal rectangles.
3. Stack and layer them to build the patter, then slice. Place the slices over a 1 mm (0.04 in) white base sheet.
4. Cover with another sheet and press gently and repeat the layering 3 times.
5. Rotate the block and cut 5 mm (0.2 in) slices. Arrange side by side, flatten lightly, then roll out to 1.2 mm (0.06 in).
π Secret tip: Chill the layered block briefly before slicing. This keeps the pattern sharp and prevents smudging when cutting.

It is still so amazing as to how the pasta sticks together after you cut it into strips, put them all next to each other and then roll it out.
