    I do 3/1/1 for short ribs, so yeah. 3/2/1 for fulll spares.

    Why wrap? They’re done if not close to it.

    If you like the color then wrap the them. If you want them darker then let them roll

    Yeah wrap those babies —- but try/use butcher paper
