i accidentally walked 15 minutes in the wrong direction during my evening hike today so i had to run about a mile and a half to get back to my car before dark and while i was running i literally could not think about anything but making this exact meal so when i got to my car (on time!!!!) i went straight to the store and bought this salmon and went home and cooked this whole meal start to finish in 45 minutes which is very fast for me. 3.5oz sockeye salmon with ~2T garlic pesto, salt and pepper and lemon, japanese purple sweet potatoes seasoned with onion powder, many herbs, and nutritional yeast, and raw arugula with my favorite oil and vinegar combo!!!!!! i feel like i just did drugs. what a high seriously. i have a lot of inflammation in my body so this was a very tactical move also. a simple and beautiful dinner!!!! i am grateful!!!
