In this video, I’m showing you how to make Arayes – juicy spiced meat on top of flour tortilla and grilled to golden, crispy perfection. This addictive Middle Eastern street food is ready in under 30 minutes and packed with flavor!
What is Arayes?Arayes (or “Ara’yes”) is a beloved Lebanese dish where thin pita pockets are filled with a seasoned minced meat mixture (usually lamb or beef), then grilled or pan-seared until the bread is crunchy and the meat is perfectly cooked inside. It’s like a Middle Eastern smash burger meets stuffed flatbread – crispy on the outside, tender and aromatic on the inside.
Ingredients (serves 4):
* Fresh pita bread or flour tortillas
* 500g ground lamb or beef (or a mix)
* Onion, garlic, parsley, and spices (cumin, coriander, cinnamon, allspice, cayenne)
* Olive oil, salt & pepper
* Optional toppings: tahini sauce, yogurt, pickles, tomatoes, or a simple salad.
Whether you’re looking for quick weeknight dinners, party appetizers, or Middle Eastern comfort food, Arayes is a guaranteed crowd-pleaser. Serve it with garlic sauce, toum, or a fresh fattoush salad!
If you love shawarma, kofta, or falafel – you need to try this next 🔥

One time I had the best lemony, herby chicken kabobs at a house party and I have always wanted to re-create them. If you have a chicken kabob recipe full of flavor I'd love to see that!
Trisha is so lucky

Start using Sea Salt, Moses? Even if it's the Morton brand..it made a big difference in my general Health!
i am so bad at cooking or trying to, but just your videos are so calming and relaxing to watch
I noticed you were talking about scraping the cutting board with the back of the knife rather than the sharp party , remember to do that with your garlic press too ! I was making that mistake for a while and was confused why the end of my knife was dull
great to see you Moses with another tasty dish!
Keep up the good work. Just commenting and liking while I watch what being cooked up to support and help your YT reach. hehe
Moses a real one for calling it Lebanese ❤
Making me hungry 🤤
I gotta try this!
You’ve inspired me to do a version of this with my gyro seasoning on a low carb tortilla and top with tzatziki and Kalamata olives!
I’ve had Lebanese fatayers and loved them growing up. The uniqueness of zatar as a spice definitely elevates the dish
I'm Turkish and I love Lahmacun😊
Instead of tortillas, use Trader Joe's "Lavash" very thin flat Middle Eastern / Mediterranean tortilla, so to spaek.
It’s like an armenian lahmajun
You are a natural 😁
My mouth was watering watching this, yum.
