What is Arayes?Arayes (or “Ara’yes”) is a beloved Lebanese dish where thin pita pockets are filled with a seasoned minced meat mixture (usually lamb or beef), then grilled or pan-seared until the bread is crunchy and the meat is perfectly cooked inside. It’s like a Middle Eastern smash burger meets stuffed flatbread – crispy on the outside, tender and aromatic on the inside.
Ingredients (serves 4):
* Fresh pita bread or flour tortillas
* 500g ground lamb or beef (or a mix)
* Onion, garlic, parsley, and spices (cumin, coriander, cinnamon, allspice, cayenne)
* Olive oil, salt & pepper
* Optional toppings: tahini sauce, yogurt, pickles, tomatoes, or a simple salad.

  8. I noticed you were talking about scraping the cutting board with the back of the knife rather than the sharp party , remember to do that with your garlic press too ! I was making that mistake for a while and was confused why the end of my knife was dull

  12. Instead of tortillas, use Trader Joe's "Lavash" very thin flat Middle Eastern / Mediterranean tortilla, so to spaek.
