Smoked Tuna Recipe

Ingredients:
• 2 lbs fresh tuna steaks
• ¼ cup soy sauce
• 2 tbsp olive oil
• 1 tbsp honey or brown sugar
• 1 tbsp lemon juice
• 1 tsp garlic powder
• 1 tsp onion powder
• ½ tsp black pepper
• ½ tsp smoked paprika
• Wood chips (hickory, applewood, or cherry)

Instructions:
1. Prepare the Marinade:
In a bowl, mix soy sauce, olive oil, honey (or brown sugar), lemon juice, garlic powder, onion powder, black pepper, and smoked paprika.
2. Marinate the Tuna:
Place tuna steaks in a zip-lock bag or shallow dish. Pour the marinade over the tuna, ensuring it’s evenly coated. Cover and refrigerate for 1–2 hours.
3. Prepare the Smoker:
• Preheat your smoker to 175-200°F (80-95°C).
• Soak wood chips in water for about 30 minutes, then drain them before adding to the smoker for enhanced smoke flavor.
4. Smoke the Tuna:
• Remove tuna from the marinade and let any excess drip off.
• Place the tuna steaks on the smoker grates.
• Smoke for 1 to 2 hours, or until the internal temperature reaches 140°F (60°C) for a firm but moist texture.
5. Rest & Serve:
• Let the smoked tuna rest for 5–10 minutes before slicing.
• Serve as-is, in salads, sandwiches, or with crackers.
