On March 16, 2026, the latest selection for The MICHELIN Guide France was revealed, spotlighting a total of 668 Starred restaurants. Below, you can delve deeper into the culinary trends that are defining French gastronomy right now or simply browse every single Star, organized by number of Stars, then alphabetically by region, département and town/city. The 62 newcomers to the MICHELIN-Starred selection for 2026 appear in red, so you can easily identify all the country’s most sought-after restaurants.
Restaurants Adapting and ReinventingFrench gastronomy is showing an admirable resilience in the face of today’s gloomy economic climate. It has demonstrated a remarkable, some might say Darwinian, ability to adapt to survive. While economic hardship has squeezed margins, it has simultaneously fueled creativity and pragmatism: lunch set menus at old-school prices, redesigned offerings from top restaurants and bistros appended to MICHELIN-Starred establishments.
This kind of innovation is to be found in Joigny at Le Bistrot des Générations, which is channeling the original family-guesthouse spirit of La Côte Saint-Jacques; at Bistrot le Héron, which allows its parent company — Moulin de Cambelong — to focus on MICHELIN-Starred dining; and at Braise in Paris, where the concept is evolving towards greater simplicity, but still with wood-fired cooking at its heart.
In Meursault, Takashi Kinoshita, who moved from the Château de Courban and its MICHELIN-Starred restaurant, has relaunched the former Auberge de la Gare with his bistro Les Murisaltiens. In a different vein, the fine-dining restaurant Lalique in Bommes (Two Stars) is offering a competitively priced set lunch menu (€59). And as for Alain Llorca’s remarkable initiative of giving diners the option of paying in three installments at no extra cost, it speaks volumes about the desire to remain open to all — or, in some cases, to remain open at all.

The Smaller the BetterAnother sign of the times is the impressive rise of small artisan businesses, often helmed by couples, such as at DAMES in Dol-de-Bretagne or Clio Modaffari and Anne Legrand’s Le Pompon. Other examples include Osméra (Bayonne), Rafales (Royan), La P’tite Pomme (Nantes) and a new MICHELIN-Starred restaurant, Agapes (Toulouse). These XS restaurants are also sometimes run by a one-person band, for example Maxime Chentouf (Germaine in Bayonne), who officiates alone behind his counter, serving 15 guests at a time.

Back to the SourceWell-sourced produce, a core value of French gastronomy, is no longer merely an option, but a must. Restaurants now (almost) systematically cite the producers that supply them — from bakers to farmers. Fish maturing in display cabinets are becoming increasingly common, as transparency around ingredients spreads beyond the preserve of large establishments: It now permeates all levels of the gastronomic landscape, and that includes modest restaurants such as Le Jour du Poisson (Île d’Oléron), where all the fruit and vegetables come from the island and freshly landed fish is sourced from the Charente fish auctions. La Borie (Paris) meanwhile, was a farm first before becoming a restaurant — an exemplary approach.

Going Green
Meanwhile, plant-based dining and vegetarianism continue to take root, bolstered not least by the influence of Alain Passard, who banished all animal protein from his kitchen in 2025. Here again, as with other issues, pragmatism is the order of the day. Dialogues (Biarritz) serves up a 100% vegetarian set menu to which fish can be added. Non-vegetarian establishments now routinely feature a starter and main course that are completely vegetarian and clearly identified as such on their menus, so meat-free diners don’t need to ask for edited dishes or a special menu on arrival.

Elevating the Alcohol-Free Experience
Across the French selection, our Inspectors are witnessing the unstoppable rise of well-crafted zero-proof beverages: mocktails, house-made syrups, iced teas and bespoke infusions. In simpler bistros, wine lists often include entire pages of alcohol-free options. At restaurants like Le Café de la Poste, these pairings come complete with detailed insights into the infusions, syrups and cold teas on offer.

Tradition Strikes Back
At the same time, the much-touted return to tradition is manifesting itself both in dishes and decor. Œuf mayonnaise (eggs mayonnaise), poireaux vinaigrette (leeks vinaigrette), langue de bœuf (beef tongue), blanquette de veau, beef bourguignon, crème caramel and île flottantes are served on red-checked tablecloths next to napkin rings and against a backdrop of vintage furnishing and enamel signs adorning the walls.
In Fontainebleau, the chef at L’Orée des Sablons champions pâté en croûte; in Dunkirk, Renée pays tribute to the chef’s grandmother; in Paris, À L’Improviste does not shy away from hearty, unpretentious, no-frills “canaille” (coarse) fare. Au Bistrot (Bordeaux), Chez Jean – la Métairie Dupont (Castelanau-Magnoac), La Table de Charrou (Limogne-en-Quercy), Clos d’Astorg, Lissit (Paris)… the list goes on. The whole of France — from the provinces to the capital — is lapping up the culinary heritage that is as comforting as it is delicious.

All Fired Up
Finally, the flamboyant technical trend for cooking over fire, embers or binchotan charcoal is burning brighter than ever. In Champagne, Philippe Mille (Arbane) cooks with vine shoots; the grill at Fogo is still working overtime; and in his bistro-cum-fishmonger’s, Élise, Poissons et Braise, Alexandre Couillon (who holds Three Stars at La Marine, L’Herbaudière) cooks freshly landed fish over embers.
Despite the turbulent times our society is facing and the resulting economic fragility, the prevailing impression of The MICHELIN Guide France 2026 remains that of a vibrant dining scene that is constantly evolving, taking risks and ultimately adapting to the ever-changing conditions of the restaurant industry.
