    Bro, finally someone who use Pancetta instead of guanciale. I use Pancetta too (because I’m too poor to afford Guanciale). And It’s delicious. Someone who is not afraid to say it

    No, that is spectacular. It’s actually hard to get it that thick if you are using a traditional recipe.

    If you used cream or something, then yeah maybe it’s too thick, but if it is just eggs and pecorino romano, that is perfect. Eggs are very very easy to overcook and it turns the sauce into a chunky mess.

    That’s what we eat at home, if the pecorino was too overpowering consider a 50/50 pecorino/parmigiano split

    Two ways to make it less thick. One is to cook the sauce less. The other is less cheese. You can cheat by adding a little pasta water instead.

    If you’re micro-optimizing, add more pasta water next time to loosen it up a bit, and (as you said) cook the pancetta a bit more.
