Midlanders now have a new spot for classic Italian dishes such as paninis, pasta, pizza and more.
Via Roma recently opened at 5701 Starboard Drive, Suite 1, offering a variety of entrees, appetizers and desserts.

Stacy StPierre, the general manager of Via Roma, said that the restaurant has deep ties in the community, from its owners to the employees.
“The people who own Via Roma were born and raised here,” she said. “A lot of our employees are local, so it’s very complete in the community.”
StPierre said the owners wanted to open an authentic Italian restaurant because Midland has few such options.
While this is the owners’ first restaurant, the goal is to eventually open more properties, StPierre said.

Via Roma has been open for about a week. StPierre said that the soft opening has allowed the team to learn the systems and work out any glitches before the grand opening.
“We have a pretty strong team with a lot of experienced people in the front of the house,” she said. “Our kitchen team is just as strong.”
She added that the soft opening has allowed customers to give the staff feedback, which has been very positive.
“We are going to the tables and asking for honest feedback and if there’s something they don’t like,” StPierre said. “We’re just being very conscious to make sure that everybody’s enjoying what they’re getting.”

She added that if somebody doesn’t like something, they can try to make it better or change out the dish for them.
“We just want to make sure everyone leaves with a positive experience,” she said.
The menu
Via Roma’s menu includes pastas such as fettuccine Alfredo, cheese ravioli, baked manicotti, lasagna and more.

“The biggest thing that makes us different from other restaurants is that our pasta is fresh,” StPierre said. “There’s definitely a taste difference and a quality difference when you eat our pastas.”
The restaurant offers sauces including marinara, Alfredo and vodka sauce. All pasta is served with a breadstick.
Customers can also find paninis such as the Italiano, chicken Parmesan, chicken pesto, meatball Parmesan and a veggie panini.
The restaurant also has a variety of pizzas including margherita, cheese, pepperoni, Italian sausage, meat lovers, veggie and chicken alfredo.

Appetizers include fried mozzarella, fried shrimp, mac and cheese bites, bruschetta and more.
Customers can also find soups, salads and desserts such as the cannoli trio, tiramisu and molten lava cake. The restaurant will also have a full bar once it receives its Texas Alcoholic Beverage Commission, or TABC, license.
Via Roma is open Mondays through Saturdays from 11 a.m. to 11 p.m. The kitchen closes at 10 p.m.
