My third cook on my kettle and I have been craving chicken thighs. I found out about kettle fried chicken and gave it a go and it was so good.

Used flour, a bit of baking powder to help crisp the skin and holy voodoo to coat the thighs.

Cooked indirect with a chunk of cherry for about 35 minutes until i pulled them at 190f internal.

Will 100% make this again

    never tried putting the baskets like a fake volcano before. I guess it will cook a lot of pieces more evenly compared to the regular way of doing things (one side direct/ other indirect).

    What’s the reason you stuck the wood on the grate? Just curious because I’ve never seen it. When I started experimenting with smoking on my kettle, I put chunks of woods straight on the charcoal and I just never strayed from that method.

    One of my absolute favorites. I recommend removing the bone, laying them flat, then using them as the main ingredient of an incredible sandwich. And all for about $3.

    I do cornstarch instead of the baking powder and they turn out great too. Love experimenting with seasoned flour kind stuff before grilling skin on chicken
