This recipe probably won’t make you sick but I am not sure it is safe.
Where is it from?
The substitution you propose will introduce more variability to a recipe that doesn’t seem standardized properly in the first place. Viscosity changes might make this recipe more unsafe.

This is one of the few recipes where sugar is for safety and not taste. Because of this I would not change the type of syrup used unless specified as an acceptable sub.
