🥔 Healthy Jacket Potato Tray Bake (Serves 4)

Jacket Potatoes

* 4 large baking potatoes
* Olive oil
* Sea salt

Filling

* 1 tbsp Boursin per potato
* Salt & pepper
* Chicken salt (to taste)
* 30g mixed grated cheese (for topping)
* 1 cooked rotisserie chicken breast, cubed
* 1 small head broccoli, steamed or blanched
* Mixed herbs (to finish)

🧀 Lighter Creamy Cheese Sauce

* 1 tub low-fat cream cheese
* 30g mixed grated cheese
* ½ tsp onion powder
* ½ tsp garlic powder
* ½ tsp adobo complete seasoning (or all-purpose seasoning)
* ½ tsp chicken stock powder
* ¼ cup semi skimmed milk

Mix everything together in a pan over low heat, stirring until smooth, melted and slightly thickened. Set aside.

🔥 Method

1. Cook the potatoes
* Pierce, rub with olive oil + sea salt
* Wrap in foil and air fry at 180°C for 1 hour
* Remove foil and cook for 10 mins more to crisp
2. Prep the tray
* Place potatoes in a tray and cut into a criss-cross (crispy) pattern
* Add 1 tbsp Boursin to each, season with salt, pepper & chicken salt
* Fluff the insides
3. Build the tray
* Sprinkle a little cheese into each potato
* Spoon over some sauce
* Add chicken + broccoli
* Top with more sauce
* Finish with remaining cheese + mixed herbs
4. Bake
* Oven at 200°C until golden, bubbling and slightly crispy on top
