A Michelin-starred chef from Spain is heading to Bangkok’s rooftop dining scene for a one-night takeover that brings classic Mediterranean cooking into a modern city setting.

On April 25, LUZ Bangkok Tapas Bar at INNSiDE by Meliá Bangkok Sukhumvit will host Chef Manuel Alonso for “Taste of Tapas: Touch the Sky”, a four-hour event running from 5 pm to 9 pm in partnership with the Spanish-Thai Chamber of Commerce.

He will be cooking alongside LUZ Head Chef Juan Ignacio “Nacho” García Racionero, with both chefs building a shared tapas menu designed around communal dining.

Chef Alonso runs Casa Manolo in Valencia, a family restaurant that has been operating for generations. He has led the kitchen for more than 40 years, maintaining a Michelin star and multiple Sol Repsol distinctions. His cooking is grounded in Mediterranean tradition, with a focus on seafood, seasonal produce and the coastal flavours of eastern Spain.

That approach carries through to the Bangkok menu, which is built for sharing rather than structured courses. Dishes include a seafood paella inspired by his Valencian roots and ajo blanco, a chilled almond and garlic soup served with smoked sardine.

The format of the evening reflects the same idea. Priced at THB 1,290++ per person, guests will receive a selection of tapas, one drink, and DJ entertainment throughout the night.

Members of the Spanish-Thai Chamber of Commerce will also be welcomed with a complimentary sangria on arrival. The setup is positioned as informal, with dining and networking taking place in the same space. The venue itself plays a key role in the experience. LUZ spans the 33rd and 34th floors of INNSiDE by Meliá Bangkok Sukhumvit, with indoor and outdoor seating and uninterrupted views of the city skyline.

A notable design feature connects the two levels visually, allowing diners on the lower floor to look up into the base of the rooftop pool above.

Tarek Beheiry, general manager of INNSiDE by Meliá Bangkok Sukhumvit, says the collaboration works because both chefs share a similar approach to food built around clarity, consistency and sharing plates. He also points to the setting, noting that the rooftop view adds another layer to a style of dining that is already social by nature.
