I have a prestige pressure canner and Ive only used it to water bath so far. What is causing the pot to get this black build up? You can see where i took a scouring pad to it and comes right off.

    How frequently do you wash it? And do you add a splash of vinegar to the water at the bottom? I only ask because when I add vinegar mine darkens a little bit but not that much. I’m new to canning so I’m not the best source. But I know vinegar darkens the metal on my Mirro 22qt

    This is due to high iron content in your water. Specifically Iron salts, it is harmless.

    I’ve never done this, but I’ve heard that adding cream of tartar or lemon juice to the water will help prevent this.
