* Chickpeas (3-4 cups cooked or canned)
* Vegetable broth (2 cartons)
* Pasta sauce (2 bottles)
* Chopped tomatoes (1 1/2 cup)
* Onion(1 cup)
* Garlic (5 cloves chopped)
* Ginger (1 thumb chopped)
* Coconut Aminos (1 cup)
* Seasonings/spices (to taste)

### 👩🏽‍🍳 Quick Overview

1. Roast the sweet potatoes + butternut squash until tender and caramelized.
2. Sauté onion, garlic, and ginger to build flavor.
3. Add tomatoes + pasta sauce + vegetable broth, then stir in lentils and chickpeas.
4. Simmer, add gluten-free penne, then fold in kale at the end.
