Raw Artichoke, Avocado & Parmesan Salad
4 cleaned artichoke hearts
1 avocado
80 g Parmesan

juice of 1 lemon
2 tablespoons white wine vinegar
4 tablespoons olive oil
½ teaspoon salt
½ teaspoon black pepper
• Thinly slice the artichoke hearts and the avocado. You can also shave the artichokes very thinly with a peeler.
• Shave some of the Parmesan with a peeler and crumble the rest with a fork.
• For the dressing, mix the lemon juice, vinegar, olive oil, salt, and black pepper. Mix well.
• Arrange the artichokes and avocado on a serving plate. Add the shaved and crumbled parmesan on top.
• Drizzle over the dressing and toss gently so everything is well coated. The artichokes may feel firm at first, but they will soften as they sit in the lemony dressing. It pairs beautifully with grilled meats, but it is also delicious on its own as a light meal. Enjoy!
