On the 41st floor of Park Hyatt Tokyo, Girandole by Alain Ducasse exudes a quiet elegance. Decorative silver plates gleam in the ambient light. Carpeted floors muffle footsteps. 

Formerly known as Girandole, the restaurant was rebranded as a Ducasse concept when the hotel reopened last December after a 19-month refurbishment. 

As far as names in French gastronomy go, few have more global renown than Ducasse. The chef and restaurateur heads an empire with 34 restaurants worldwide, holding a total of 21 Michelin stars.
