
Recipe:
Cobbler —
3 cups regular or gluten free all-purpose flour
1 cup organic sugar
1 Tbsp lemon zest
1 tsp baking powder
¾ tsp salt
1 cup dairy free butter, chilled & cubed
1/4-1/2 cup vegan buttermilk
1 flax egg

In a mixing bowl, add flour, sugar, zest, baking powder, and salt then whisk together.

Add cubed butter and incorporate until mixture resembles crumbs. Add flax egg and 1/4 buttermilk then combine. If needed, add more buttermilk. Batter should be scoop-able.

Set aside until assembly.
Filling —
2 lb frozen mixed berries
1/2 cup organic sugar
2 Tbsp lemon zest
1/4 cup cornstarch
1 Tbsp vanilla extract

In a medium bowl, all ingredients and mix well.

Preheat oven to 350°F.

In desired pie dish, add filling then scoop cobbler on top.

Bake for 35-40 mins or until golden brown. Remove and serve warm. Optionally, serve with vegan vanilla bean ice cream.
