Did you fry them hot/warm or did you let them cool in the fridge before frying?

Nice this has become my go to home wings method. It actually works great.
When you bake before frying, the fry time is way lower and you can use way less oil. I still use enough to deep fry, but I can get by with a fraction of the amount of oil if I bake them prior. Also it keeps them consistently cooked through. You can let them cool down to room temp before frying, or refrigerate them and then fry them for the reheat.
I’ve been making wings like this for the last 1-2 years. It works great. Some restaurants also use this method. Some people smoke the wings then fry them, which is similar and likely works great. I haven’t tried that yet.
