Kofta in pomegranate molasses, not your traditional kofta but it’s absolutely delicious if you like sweet and tart flavors. My mom used to make it with store bought molasses which delivers a more vibrant color because it’s not pure molasses. I promise if you make your own molasses it’s way better
Ingredients:
4 large pomegranate, squeezed
1.8lb/685g ground beef
1 cup onion, chopped finely
1/2 cup parsley, chopped finely
1 1/2 tsp mixed spice or 7 spice
1 tsp paprika
1/2 tsp cinnamon
1/2 tsp black pepper
1/2 tsp salt
Drizzle of olive oil
4 cups water
Slurry: 2 tbs cornstarch + 2tbs water
*start by making the pomegranate molasses, for that you will need to extract the juice from the pomegranate seeds then strain it well to remove any impurities. I prefer squeezing the juice by hand to avoid bitterness from the seeds and less impurities because the seeds stay whole. If you want to use the blender that’s fine too just make sure to strain twice
*place in a pot and bring to a boil, skim all the froth that develops. Lower the heat and cook on low for 40-45 minutes stirring occasionally and skimming if you see any thing, for reference I used 4 large pomegranate which resulted in almost 4 cups of pure juice which yielded to 3.5 ounces of molasses. You know it’s ready once the molasses coats the back of a spoon and a finger runs clean
*for the kafta mix all the ingredients and drizzle enough oil for the mix to come together
*form the kafta into balls and place in a lightly oiled pan. Bake at 400F until browned about 15-20 minutes
*in a large pot pour the molasses along with 4 cups water, stir and bring to a boil. Drop the kofta balls in the sauce cook for 5 minutes, skim any froth that comes to the surface. Make the slurry add it to the sauce to thicken
*place the kofta in your serving bowl, run the sauce through a strainer. Top the kofta with pomegranate seeds and chives enjoy next to rice or simply wit bread
