Hola! Inspired by @tarasboulba7744’s post with fried scallop tacos on red corn tortillas. And pickled onions. So I had to try and re create it. Only I made a pink habanero salsa inspired by a salsa guy from Mexico. The beet juice is the magic on how to make the onions super duper pink.

Details: fried scallops, panko dusted with chipotle powder on a bed of organic red cabbage, red corn tortillas made with Masienda red corn masa harina. Pickled red onions died with beet juice, chipotle crema sauce, and a beet habanero salsa. Overall – I’m pleased with the results. I do have cilantro to put on it. But I was hungry lol
