i’m so happy with the way that these turned out & i think the sandwich loaves are a new fav.

sourdough sandwich bread

300g water

150g starter

25g maple syrup

20g olive oil

500g bread flour

10 g salt

mix & let rest an hour, stretch & folds every 30 mins for 2 hours. bulk fermented 7ish hrs. shaped & cold proofed overnight. baked at 425 for 20 minutes with lid, 10 without lid, 10 on oven rack.

original sourdough

320g water

150g starter

mix & let rest an hour, stretch & folds every 30 mins for 2 hours. bulk fermented 7ish hrs. shaped & cold proofed overnight. baked at 450 for 30 minutes lid on & 15 lid off.

    They look great! I really like the sandwich loaves. So you let the sandwich loaf proof in the sandwich pan, and stick it straight in the oven from there?

    You say you baked it with lid on, did you use the lid of the sandwich pan, like a Pullman bread pan?
