They look very tasty and have a great crust. Yours turn out like mine do, with a more bready crumb vs the “nooks-n-crannies”, but everyone still loves them.

Something happened which I’m going to blame on under fermentation(the overly tight crumb) over-kneading and possibly incorrect hydration.
I’m wondering if you used a kitchen scale. I’m thinking there might be an issue with hydration level but I don’t know.
