After eight trips to Miami and dozens of Cuban sandwiches, I finally found the one that ended the search.
At Las Olas Cafe, they do things differently. The pork is shredded, not sliced. The sandwich is cut lengthwise, not in half. Then it’s pressed hard on the griddle until the bread is crisp and the mustard, pork, and pickles melt together into something completely different.
It eats cleaner, hits harder, and honestly… it changed how I think about the Cuban sandwich.
In this video, I’m recreating that Miami-style Cubano from scratch. Mojo roast pork, real Cuban bread, and the technique that makes this sandwich stand out.

Italian Oregano IS NOT a direct substitute for Mexican Oregano. They are not the same species of plant. If you must substitute, use marjoram.

I'm cuban this looks delicious and extremely well done. Something i do when I do the pork. (No traditional disclaimer) is when I finish cooking the pork i put it to rest and the remaining liquid i reduced closely to a glaze while the pork is resting and then shred the pork and add the reduction to it. In my opinion brings an extra touch to the sandwich. Have a great day brother.

As a Tampa citizen I am disgusted by the “Cubano”. WTF is that? A Cuban has roast pork,ham Swiss cheese pickles and mustard on “CUBAN” bread ( a modified baguette style bread that is slightly wider and has palmetto leaves baked onto it and finally MUST have Genoa salami on it! That bs in Miami is a ham and cheese sandwich.

You have that sheet pan to put in the marinated pork. So there should be no need for that dumb platic bag. Mix the marinade in the pan and put the meat in, done. Also, why cut the heels off the bread? They're perfectly edible.
