JW Marriott New Delhi Aerocity has announced the appointment of Paride Novello as the new Italian Chef de Cuisine at its signature dining destination, K3 – New Delhi’s Food Theatre.
Bringing over two decades of global culinary experience, Chef Novello will lead the hotel’s Italian culinary and dining operations, further strengthening its diverse gastronomic offerings. Most recently, he served as Executive Sous Chef at Hotel Grimsborgir, where he contributed to delivering refined dining experiences in a luxury setting.
Over the course of his career, Chef Novello has been associated with renowned hospitality brands such as Kempinski Hotels, The Ritz Carlton Doha, and Studio City Macau. He has led award-winning restaurants across Europe, Asia, and the Middle East, combining strong operational leadership with a deep-rooted understanding of regional Italian culinary traditions.
A graduate of the I.A.L. Hotelier Institute in Trieste, Italy, Chef Novello has consistently demonstrated culinary excellence across diverse markets—from fine dining Italian establishments in Bangkok and Beijing to luxury hospitality destinations in Dubai, Nairobi, and the Dead Sea. His professional journey also includes collaborations with Michelin-starred chefs and leadership roles in high-performing kitchen teams across multiple openings and concept-driven dining venues.
In his new role, Chef Novello will focus on curating a contemporary Italian menu that remains rooted in authenticity while embracing evolving global palates. His approach emphasizes seasonal ingredients, precision in technique, and a refined balance between tradition and innovation.
