Gyritto (Gyros Style Burrito)
 
PREP TIME: 20 min | COOK TIME: 25 min | SERVES: 4
 
Ingredients for the Gyritto Meat:
• 1¼ lbs. ground beef, lamb or turkey
• 1 tsp. salt
• 1 tsp. black pepper
• 2 tsp. dried oregano
• 2 tsp. marjoram
• 1 tsp. ground cumin
• 1¼ tsp. dried thyme
• 1½ tsp. minced dried onion
• 1½ tsp. ground coriander
• 1 tsp. sweet paprika
• ¼ tsp. cayenne
• 5 garlic cloves, grated
• ½ c. beef broth
• ½ c. water
• 1 Tbsp. red wine vinegar
• Juice of 1 lemon
• 2 Tbsp. olive oil
 
Ingredients to Build the Sandwich:
• 2 tomatoes, sliced into half-moons
• 1 small white onion, sliced into half-moons
• 1–2 c. tzatziki sauce
• 1½ c. crumbled feta cheese
• 4 extra large burrito shells or 8 soft flour tortillas
• Seasoned french fries
 
Seasoned French Fries:
• 16 oz. frozen french fries
• 1 Tbsp. dried oregano
• 2 Tbsp. olive oil
• 2 tsp. salt
• ½ tsp. black pepper
• 1 Tbsp. sweet paprika
 
Tzatziki Sauce:
• 1 c. plain Greek yogurt
• 1 medium English cucumber, grated
• ¼ c. fresh dill, coarsely chopped
• 4–5 garlic cloves, finely minced
• 2 Tbsp. red wine vinegar
• ¼ c. olive oil
• 1 tsp. white pepper
• Salt to taste
 
Directions:
1. Mix all dry spices together in a small bowl.
2. Heat olive oil in a large skillet over medium-high heat until glistening.
3. Add ground meat and break into crumbles, then add grated garlic and stir for 2 minutes.
4. Add dry spice mixture to meat and stir for 1 minute.
5. When meat is cooked through, add broth, water and vinegar and bring to a boil.
6. Reduce to simmer, add lemon juice and cook for 5 minutes until liquid reduces.
7. Taste and adjust seasonings, then set aside.
8. Prepare french fries according to package instructions.
9. Toss cooked fries in a large bowl with olive oil, black pepper, oregano, salt and paprika.
10. Grate cucumber with skin on using a box grater or food processor.
11. Squeeze all liquid out of cucumber with your hands and discard liquid.
12. Combine yogurt, cucumber, dill, garlic, vinegar, olive oil and white pepper in a medium bowl.
13. Whisk together until combined, add salt to taste and refrigerate for at least 1 hour.
14. Place tortilla on a flat surface and spoon 2–3 Tbsp. tzatziki sauce onto center.
15. Add ⅓ c. gyritto meat, then top with tomatoes, onions, feta and a handful of seasoned fries.
16. Fold bottom of tortilla up to center, then fold in left and right sides.
17. Roll tortilla from bottom to top, sealing all ingredients inside.
18. Wrap in parchment paper or aluminum foil for easier eating.
 
Advice:
• Wrap tortillas in aluminum foil and heat at 350°F for 5 minutes to soften them for easier rolling.
• Make a large batch of the gyritto meat spice blend to have on hand for quick assembly.
• Use these components to make a gyritto salad or grain bowl with quinoa or rice.
