used this recipe i found on pinterest tastes pretty good! it made way more than i expected so me and my roommates will have some and more for a few days 🙂

recipe in third photo i’ll put it here too! Ingredients:
For the Chicken:
• 1.75 Ib boneless skinless chicken thighs (800g)
• 1 tsp salt (5g)
• 1 tsp black pepper (3g)
• 1 tsp garlic powder (3g)
• 1 tsp dried oregano or Italian seasoning (2g)
• Itsp olive oil (15 ml)
For the Orzo:
• 11/2 cups dry orzo pasta (300g)
• 1 small yellow onion, finely diced (120g)
• 3 cloves garlic, minced (9g)
• 3 cups low-sodium chicken broth
(720 ml)
• 1/2 cup nonfat Greek yogurt or light cream (120g)
• Zest of 1 lemon
• Juice of 1 large lemon (45 ml)
Instructions:
1.Season the Chicken: Pat chicken dry and season evenly with salt, pepper, garlic powder, and oregano.
2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat, add chicken, and cook 4 to 5 minutes per side until deeply golden and cooked through. Remove and set aside.
3. Cook the Aromatics: In the same pan, add onion and cook for 2 to 3 minutes until softened, then add garlic and cook for 30 seconds.
4. Toast the Orzo: Stir in dry orzo and cook for 1 minute to lightly toast.
5. Simmer the Orzo: Pour in chicken broth, bring to a gentle simmer, and cook for 8 to 10 minutes, stirring occasionally, until orzo is tender and creamy.
6. Make It Creamy: Lower heat and stir in Greek yogurt, lemon zest, lemon juice, and Parmesan until smooth.
7.Add Spinach: Fold in spinach and let it wilt into the orzo.
8. Finish the Dish: Nestle chicken back into the pan and simmer for 2 to 3 minutes to warm through and absorb flavor.
