





We had a nutritionist come into my work to talk about healthy eating, and they said this is the only diet that isn't a fad. I didn't realise how high my processed food consumption was prior to starting! I'm not perfect, but I would say 80% of my meals follow the diet- mostly!
Here's a few meals I've have recently

Smoked salmon on whole grain with capers

Morrocan chicken and spinach with brown rice and lemon

Not the prettiest picture- but its lamb koftas, dolmades, kim chi, wholegrain pita, felafel, beetroot, cherry tomatos with Greek yoghurt and brown rice

Mixed roast veggies with lamb and fetta

This one is quite random but it's green beans, boiled eggs and steamed veggie dumplings

Anchovies packed in tomato sauce on wholegrain toast- my first time trying them!
Not pictured is my go-to quick meals at the moment-
My breakfast every morning is a slice of multigrain toast, with low fat cottage cheese, tomato and cracked pepper.
My lunch at work is a multigrain sandwich with Avocado, watercress, spinach and tinned fish.
Dinner is likely to be steamed fish with a green vegetable (either beans or peas) with brown rice and quinoa. And if I'm out having a beer, I've been swapping it for a red wine.
I've bought a purely vegetarian cookbook today (it's Linda McCartney OG one) so I can eat less meat throughout the week.
I'm looking forward to more cooking adventures!
