Today I’m making a no-tuna chickpea salad two different ways — one with dill pickles and pickle juice, and one with sweet relish, just like the tuna sandwiches I used to love.
I’ll make one simple chickpea salad base, split it in half, and let Paul do the taste test to decide which version wins. We’re serving it on mini corn tortillas for a fun twist, but this works perfectly for sandwiches, wraps, or lettuce cups too.
This is a whole-food, plant-based recipe that’s easy, budget-friendly, and great for meal prep.

Ingredients:
1 ½ cups cooked chickpeas
¼ cup chopped carrot
¼ cup chopped celery
¼ cup diced red onion
¼ cup plant based mayo or 3 Tbsp tahini
1 tsp Apple cider vinegar
1 tsp Yellow or Dijon mustard
2 tsp Garlic granules
1 Tbsp Everything bagel seasoning
1 tsp chopped capers
2 Tbsp raw sunflower seeds
Add Ins:
1 Medium dill pickle chopped
1 Tbsp Dill pickle juice
Or
2 Tbsp sweet relish
Instructions:
Add chickpeas to a food processor and pulse until chunky smooth.
(or you can also use an immersion blender or just mash with fork)
Dump pulsed/mashed chickpeas into a large mixing bowl.
Add the rest of the ingredients into mixing bowl and stir together
Add chopped dill pickle and juice or sweet relish to your mixture and mix in.
Serve on a toasted corn tortilla, make into a sandwich, lettuce wrap or however you would like!

Looks delicious both ways. Reminds me of my mom's tuna salads. Not vegan 😕. Made with similar ingredients as yours. She made one with yellow onions, boiled egg and dill pickles. Added mustard with mayo. The other, she called sweet tuna. Made with red onion, apples and maybe sliced grapes, with sweet relish or pickles. Unbelievable how different they tasted between sweet pickles and dill mixtures. ❤️🙏❤️

Definitely capers. I'm not really a pickle person in my "tuna" salad but I do like basil in my salad and have always added sunflower seeds. You guys always offer great vegan recipe ideas. Thank you for sharing :o)

Yes! I do love a good chickpea salad. Capers! That’s what mine is missing. Thanks for that. For something a bit different, I make a salad with Thai peanut flavors. I add celery, carrots, chopped pickled jalapeño and cilantro. Vegan mayo, peanut butter powder (or peanut butter or both), lime juice and a splash of toasted sesame oil.

Never bought capers or bagel seasoning, now I have to! I already know I'll be in the sweet relish gang. I've made this b4, but not like this, and the food processor will be easier than hand mashing. BUT, I do prefer cutting everything up by hand vs using kitchen accessories. What could I use instead of the PB mayo?
I'm a dill pickle person. I like to put a little bit of pickled jalapeno juice, little bit of kelp flakes, and Dijon mustard. I do not put any everything bagel seasoning in it

The idea of adding capers is genius! I also appreciate that you don't "skin" your chickpeas. Colossal waste of fiber. Team relish all the way!
The recipe you used is almost identical to the one I use. The only difference is, I buy a big jar of whole dill pickles dump out all the juice (I save it for other recipes). Then I cut each pickle into chunky bite size pieces. Add a cup of coconut sugar and a couple tablespoons of crushed red peppers back to the jar, And then feel 1/3 of the jar with vinegar and the rest with water. Shake well and store in the fridge for a month.
This creates a delicious spicy sweet snack pickle that is our favorite in this chickpea salad recipe.
I always make a big batch of this when we take a road trip because it's perfect as you said, in a sandwich on a bed of greens or just by itself. Plus it last easily for a week!

I tried so many versions but I just tried it with half chick peas and half mashed tofu and really liked it a lot. This way I get my beans (fiber) and high protein from the tofu in one meal.

I love fine chopped radishes in my faux-tuna salad and also a bit of nori flakes. Also, pickle juice is life !!! I use it as straight salad dressing !!!
I add seaweed like nori or that roasted seaweed snack that you get in those individual packs, it gives it more a tuna flavour as the seaweed has that fishy taste. I’m going to try your recipes. Thank you.
