The World Equestrian Center celebrated the grand opening of its new Equestrian Manor on Thursday, a four-story dining and events venue featuring four chef-driven restaurant concepts and rooftop experiences with sweeping views of the property.
It’s a massive expansion of the Ocala resort’s culinary offerings — which now total 13 — across unique, global menus crafted by world-class chefs, including James Beard-recognized talents.
“World Equestrian Center was built with the vision of creating a destination that surprises and inspires at every level,” Jeremy Gow, senior director of hospitality operations for World Equestrian Center, said in a news release. “Dining at The Equestrian Manor plays a central role in bringing the property’s vision to life.
“By welcoming accomplished chefs, globally influenced menus, and a commitment to thoughtful execution to Ocala, we’re raising the culinary standard for the region and creating experiences that feel both unexpected and world class.”
The culinary program is led by Executive Chef Stephan Holland, whose resume spans more than 20 years and the globe in scope — including work alongside stalwarts like Chefs José Andrés and Nobu Matsuhisa.

The ribbon cutting marks a new era for the resort and debuts four new venues for guests and visitors to enjoy. They are The Polo Pony, featuring largely American fare; Genevieve’s, an Italian concept; White Willow, an Asian fusion restaurant; and Emma’s Patisserie, offering desserts and pastries for a sweet treat after dining.
The latter is especially notable because the WEC’s pastry chef, Yohann Le Bescond, was a semifinalist in the 2025 James Beard Awards. And alongside Executive Pastry Chef Kari Howard, the release said, he will bring artisanal confections to the table.

On top of bringing hundreds of new jobs to the Marion County community, Equestrian Manor expands the options for events — with spaces available for weddings, meetings and other gatherings.

Each new venue is available for individual dining, private experiences and full buyouts — whether guests stay on property or not. Though even more Central Floridians may consider the property for a staycation with addition of the manor.
