23g Crisco (can substitute with Vegetable Oil, but Crisco is ideal) (10% as a Baker’s Percentage)
4.6g (2 1/4 tsp) Diastatic Malt Powder (2% as a Baker’s Percentage)

Chicken Cutlet

Flour (salt)
egg
italian breadcrumbs

Sauce

red pepper flake
oregano
basil
tomato passata
sour cream
salt
pepper

topped with mozzarella cheese and parm
