Here’s all the recipes for the different treats!

Peanut butter cookies

2 lg eggs
1 cup peanut butter
1/2 cup monk fruit (or swerve)
1 tsp vanilla
Optional 1/2 cup Lilly’s chocolate chips

Mix ingredients, scoop into balls on parchment paper, flatten with a fork, bake 350F for 12ish minutes until color starts to show, will stiffen once cooled.

Pistachio cardamom white chocolate bark

1 bag Lilly’s white chocolate
1 Tbs cardamom
1/2-1 cup lightly crushed pistachios

Melt chocolate, I microwave it in 20-30 second intervals while stirring in between, mix in pistachios and cardamon, pour into container, cool in fridge till solid.

Lemon poppy seed cloud bites

6 lg eggs
1/4 cup monk fruit (or swerve)
1/2 tsp vanilla
2 md lemons’ zest
3 Tbs fresh lemon juice
1 Tbs poppy seeds
2 cups heavy cream powder (sifted for smoother texture)
Pinch of salt

Lightly butter pan or mold, I use mini muffin silicone molds, heat empty tray/molds with the butter at 350 convection for 5-10 minutes, fill trays/molds with batter, bake 15-25 minutes depending on if doing mini or full size until light color on top, will deflate a bit as they cool, also will set up more after sitting in fridge.

Coconut Macaroons

2 lg eggs
1 cup unsweetened coconut
1/2 cup almond flour
1/2 cup monk fruit (or swerve)
1 tsp vanilla
2 Tbs melted coconut oil

After mixing scoop into balls onto parchment, I use a Tbs cookie scoop, bake at 350 for 20ish minutes till golden color.

Cardamon spiced muffins

6 lg eggs
1 cup almond flour
1/2 cup monk fruit (or swerve)
1/4 cup brown swerve
1 Tbs cinnamon
1 Tbs cardamom
1/2 Tbs nutmeg
1 tsp vanilla
Pinch of salt
1 Tbs baking powder
1/2 stick (1/4 cup) melted butter

Bake at 350 convection, I do these in mini muffin silicone molds, 15-25 minutes depending if mini or full size.

    Sorry all the ingredients are shoved together, the preview showed the text formatted differently with everything separated so don’t know why it changed it after it uploaded and I can’t find a way to edit the post.     Lovely, thank you! I like a little almond extract in macaroons, coz my mom used to use it. I also love a chocolate coconut macaroon. Anybody know how much cocoa to add?
