A NEW independent restaurant has opened in Limerick city centre, offering traditional Italian-style pizza.

Slyce which opened on May 1, is currently operating a trial menu as it seeks to identify the most popular dishes ahead of a full launch.

The restaurant is aiming to combine traditional Italian-inspired flavours with locally sourced ingredients and freshly prepared dough.

The business is focused on a “pizza al taglio” style offering a traditional Italian pan pizza alongside focaccia sandwiches, calzones and paninos, as well as a selection of sweet pizzas inspired by Brazilian flavours.

The current menu is being used as a testing phase, with the team monitoring customer preferences before finalising its full offering.

A key focus for the business is freshness, with dough prepared in-house and allowed to ferment for 48 hours.

Slyce is working with Limerick-based supplier Mocha, which operates from Dooradoyle, as part of its commitment to local sourcing.

Located in the heart of the city on Denmark Street, the restaurant has already seen early trade boosted by Riverfest.

The business is also considering expanding its opening hours further as demand grows.

Beyond its food offering, the restaurant is aiming to play a broader community role, including plans to employ people with disabilities.

Slyce is open from 12pm to 9pm from Monday to Friday and from 12pm to 10.30pm on Saturdays and Sundays.
