Working on changing over my diet; it helps that I already like to eat this way so it’s mostly about habits.

This was one cup each of mixed brown and wild rice and lentils in the rice cooker, seasoned with onion, garlic, and rosemary. Add spinach at end of cycle and keep cooker closed for a few minutes until spinach is cooked. Then add soy sauce, feta, chopped cucumber. Other ingredients were to taste/until it looked like the right amount.

The one non-Med diet ingredient was toasted sesame oil but I will try this again in the future with EVOO.
