Went to a new meat market and this is what I got. Cost $22. To me the cap looks thin but that's all they had.

    Definitely agree that the cap looks thin. Beef prices being what they are, I guess that’s a fair price these days.

    Looks okay, but $22 is quite a lot for the bare minimum amount of marbling on a ribeye.

    That’s a 4/10 ribeye, would eat it any day, fucking delicious if cooked right.

    It strikes me as arrogant. Shallow and callous as well. Incredible lack of marbling for a Ribeye.

    Not enough marbling. It’ll eat, but look for prime next time. The more marbling ot as, the more tender and delicious It’ll be.

    Not bad. But not very good. Not 22$ worth unless 3 inches thick.

    Looks okay. The marbling is not great. The spinalis is small because it’s cut toward the loin end. I prefer ribeye from the chuck end. This is coming from a journeyman butcher.

    It looks fine, people are just being weird here as they always are, I’m realizing. The fact that you said you paid 22 without telling us the weight/thickness, yet people are saying you over paid, proves my point that people don’t know what they’re talking about.

    Because of the small spinalis and poor marbling I would have passed on this steak, at any price. My two cents.
