Spring is officially here, and I couldn’t be more excited. I’m itching to banish my puffer jacket, and pick back up my after-work walks. The only problem is that the weather in New York City isn’t completely on board with my big plans yet. 

So while I wait for the city to warm up, I’ll have to settle for celebrating the season in my kitchen. I’m thinking tons of girls’ brunches, candlelit dinner parties, and even fancy luncheons with friends. In fact, my first brunch of the season is tomorrow. And the recipe I’m most excited to make is the Amalfi cocktail — all my friends love it.

While I won’t ramble on and on about the time I was lucky enough to actually go to the Amalfi coast, I will say that this cocktail is very reminiscent of every limoncello shot and drink we had there. Seriously — there isn’t a more accurate name that could be given to this cocktail, which has officially become my new favorite spritz.  

Don’t get me wrong: I love Aperol and Hugo spritzes, but I sometimes find them to be a little sweet. Their star ingredients are a little heavy, in my opinion. This Italian-inspired drink is still super-bright, light, and refreshing, without any overwhelming aftertaste. I really like limoncello, but I know it is not everyone’s cup of tea. But toning it down with Prosecco and club soda helps to keep the tangy, sweet lemon flavor in check.
